Traditionally roasters have only had the choice of more commercial coffee regions such as the popular Antigua and lower altitude Huehuetenango.
Pacaya volcanic coffee has very sweet aromatics, laced with floral and fruited elements, including a honey and caramel aroma. Hot water builds on the layers of Cacao/Chocolate flavours and is complimented with a full body and well-balanced citric acidity. It is a pleasingly tasteful combination without bitterness.
Villa Canales is a small Guatemala town whose economic growth has been based around agriculture, is a municipality in the Guatemala department of Guatemala.
It is known for its fine-tasting coffee which is slightly more acidic than that of nearby Antigua.
Due to rapid growth and development, it has become one of the main municipalities for the employment of young Guatemalan environmentalists seeking to progress outside of the chaotic city life and continue growing their family coffee-growing heritage.
